Curry was brought to the Caribbean by the British and the Indians they brought with them to work in the sugar plantations. The flavours were quickly exchanged with the French Islanders who gave it their own unique touch. This curry, popular across the Westward and Leeward Islands, uses the freshest leanest pork tenderloin.
